The Beer

The Bush de Nuits (Scaldis Prestige de Nuits) is a variant of the Bush range that was introduced in 2008. Like the Bush Prestige, it spends a long time – six to nine months – maturing in oak barrels, before hitting the bottle. But in this case the barrels holding the beer aren't new, but 'recycled'. Previously they were used for the storage of the famously intense burgundy, Nuits St Georges.

The matured beer is then bottled, in large 75cl bottles, and allowed to re-ferment in the brewery's warm room. This helps it to notch up that rather extravagant 13.0% ABV rating. Its basis beer is already on the strong side: the Bush de Noël (12.0% ABV) is a Christmas beer, especially fashioned for the long dark nights of winter.

It serves as an excellent foundation for the Nuit, with many seeing it as a point of reference for Christmas beers. Unlike most other such seasonal beers, the Bush de Noël doesn't use herbs, either, for its dash of festive flavour. Instead, hop flowers are used during maturation. The end-result is a beer with a strong package of aromas and tastes that many have equated with a fruity red wine.

    Bush de Nuits is served in the hand-blown, artisanally produced Bush chalice, with its characteristic craquelé (crackled) finish.

      Character, Tastes & Aromas

      The re-fermentation undergone by Bush de Nuits results in a quite amazing beer – a brew brimming not just with alcohol, but with refined character. Its subtle aromas and tastes are reminiscent of wine and provide added touches of red fruit. The mouth feel is surprisingly well-balanced.


        The Bush de Nuits is ideal as a fully-fledged aperitif or digestive beer, thanks to its richness of aromas and tastes. But this complex and highly aromatic beer is not really suitable for use in cooking. However, it makes a gorgeous partner for foie gras (duck or goose), with pâté, sausage or rillettes (a terrine dish similar to a coarse pâté) as a starter.

        Recommended as a pairing with game dishes with cranberries or in a chocolate sauce. Delicious with puddings containing unsweetened fruit, chocolate cake, crème brûlée, sorbet and to complement strong cheeses. Also provides a splendid end to a meal on its own.
