A gueuze is made by mixing together other brews, which are young and aged lambics. Lambics themselves evolve from spontaneous fermentation by wild spores (as opposed to using brewer’s yeast), and when they are blended, a second fermentation is sparked as the young lambic still contains enough sugars. Somewhat sour in taste, they are a unique product of Belgium, and the taste and types differ depending on what lambics are combined. This brewery in the Brabant region produces three different gueuze.
