The monks who founded the Leffe Abbey brewery back in 1240 had very noble ambitions: to provide pure and healthy refreshments to visitors and travellers, free of disease in a time of plague. Since the water in the ale is boiled during the production process, Leffe was certainly a wise option  - and still is now!
