Belgian Wild Ale

The Beer

Wild Jo marks a turning point for De Koninck: the brewers are swapping their familiar top-fermented beers for a tempestuous Belgian Wild Ale, re-fermented using wild yeasts (Brettanomyces).

The result? Rock ’n roll in a bottle. The beer becomes even wilder and its flavour more and more intense. Thanks to the dry hopping with two varieties of European hops, this beer provides an intensely hoppy aroma that continues to evolve as it re-ferments in the bottle.

Discover the refreshing mix of bitter and sour aromas contained in this dry beer as well as its subtle character.

The beer name ‘Wild Jo’ did not just fall from the sky; ‘Jo’ is a reference to brewmaster Joseph Van den Bogaert, who was responsible for the resurrection of this brewery after the First World War.

This beer’s iconic representation is the wild pigeon of the city of Antwerp. She roams the city, soaring through the air and makes her home in deserted buildings. This is why this blue pigeon, complete with eye-patch and tattoos, adorns the label.

The launch of Wild Jo coincides with the opening of this completely refurbished Antwerp city brewery. Its site now includes an extensive, signposted visitors’ trail, two tasting rooms and a brewery shop.

The complex includes other stores where you can taste before you buy: a bakery, a butcher’s and a chocolatier. Pop into the cheese affineur and see top-quality cheeses mature in the very best conditions.

The on-site restaurant lets you discover excellent food pairings with, amongst others, De Koninck, Winterkoninck, Triple d’Anvers and Wild Jo.

Fermentation

Wild Jo is a top-fermented beer that re-ferments in the bottle through the addition of wild yeasts (Brettanomyces).

Ingredients

Wild Jo is brewed with water, yeast, wild yeast (Brettanomyces), pale barley malt and two varieties of European hops.

Colour & Transparency

Golden blond, slightly cloudy beer with a luxurious white collar.

    6 °C / 43 °F

    Serving Glass

Wild Jo is served in an elegant, tulip-shaped, branded glass that helps to preserve the collar of froth and ensures lingering aromas.

      Character, Tastes & Aromas

Discover the earthy aromas and experience how they blend in with the floral aromas. We pick up delicate touches of smoke, impressions of stone fruit (apricot, peach) and citrus (orange).

The Wild Jo flavour is slightly sweet at the outset, offering a hint of grapefruit on a slightly sour undercurrent, followed by a bitter finish. The dry character of this Belgian Wild Ale is striking.

        Culinary

The freshly sour touches of this beer demand a soft, creamy goat’s cheese, the brie-type Florence Bio for example.

To provide a beautiful contrast we can recommend the salty Tome de Liège abbey cheese with its red crust. The robust texture of the cheese is dissolved by the beer.

        Keeping and Storage

Wild Jo will keep in the bottle for 36 months. Best stored in a cool and dark environment.
